Directs the preparation (safe, flavorful food) and presentation of foods for all food service programs; responsible for creative, innovative menus for resident dining and special events (ie Family Nights, Public Relation Events and Holiday Meals ); operates / utilizes kitchen equipment to prepare food for residents, visitors, staff and catered events; serves as Chairman of the Resident Food Council; conducts initial, quarterly and annual visits with residents to determine food preferences and ascertain resident satisfaction with food services; and works collaboratively with registered, licensed dietitian on implementing resident nutritional care plans. Provides initial and ongoing personnel training and development; (ie. develops work schedules; assigns work task by position; evaluates work performance and completes annual review of assigned employees; carries out commendations and corrective actions of supervised employees when warranted.); ensures that staff members are adhering to established policies and procedures; informs staff members of changes in policies or procedures; updates/reviews department policies at a minimum of every three years; and conducts monthly in-services with dietary staff. Maintains time and attendance system and processes department payroll every two weeks. Determines dietary department operational and capital budget needs and oversees inventory and ordering processes; conducts the physical inventory of food and supplies; places orders by vendor’s process (ie. computer, telephone, fax, etc.); processes weekly invoices for accounts payable; evaluates vendors and products, negotiates for the best balance of price, service and quality; and adheres to established budgets under their responsibility to include per patient day allowances. Maintains the resident computerized tray tag and snack software program. Assists in food related marketing functions (e.g., plans such events with the Activity/Marketing Coordinator and works closely with activity personnel). Creates and maintains a quality plan for the department for performance improvement initiatives through the execution of a monthly KRM grid (Key Results Measure) which incorporates a Hazard Analysis and Critical Control Point (HACCP) Plan for food safety (refrigerator / freezer temp logs, food temperature logs, sanitation/cleaning checks, temperature logs from each kitchenette weekly, etc.) Prepares and maintains repair requisitions; sanitation inspection reports, and other related documents. Ensures regulatory compliance with the food service department for the Ohio Uniform Food Code, the Ohio Department of Health for Long Term Care Standards and Centers for Medicare and Medicaid (CMS).

Requirements
Associate of Occupational Sciences (AOS) Degree in Culinary Arts or culinary certificate and three (3) to five (5) years of culinary experience preferred. A minimum of two (2) to five (5) years of culinary / kitchen management experience is preferred. Knowledge of food and catering trends with a focus on quality, production, sanitation, food cost controls and presentation. Computer knowledge of Microsoft Office Applications (ie Word, Outlook, Excel.) Applied Food Service Sanitation (ServSafe Certified).

80 per pay (Every two weeks)
